You know how there are some desserts that only adults like and some that only kids like? Well, this isn't one of those :) I mean... who doesn't like Oreos! PLUS it's a great dessert to serve at parties - sort of like 'the finger food of desserts' !

Oreo Cookies
3 pkg Philadelphia Cheese (8oz or approx 225gm each)
3/4 Cup Sugar (i used only about half this amount because the Oreo Cookie filling is very sweet)
1 Cup Sour Cream
1 tsp Vanilla
4 Eggs
STEP ONE:
Bring Cheese to room temperature then cream till slightly soft.
STEP TWO:
Add Sugar, a spoonful at a time.
STEP THREE:
Add Eggs one at a time beating to incorporate before adding another.
STEP FOUR:
Add quartered cookies and beat only for about a minute. We still want to see small bits of cookies and not thoroughly blended cookies.
STEP SIX:
Pour into sheet pan about 14" Square
STEP SEVEN:
Find a round cookie cutter that is the same size as the Oreo Cookie.
Cut out and assemble.
Best to have cookie filling on the side of the top of the cheesecake. That way, it will hold better.
Give it a little press together.
** Best to use gloves for this since you are now handling the finished product.
