A crunchy golden brown coating that gives way to a soft, smooth filling of potato and minced pork, flavored with the fruity sweetness that only Japanese Curry can give. Best enjoyed with rice and a little Japanese mayo. A carbo overload in the making? Yes, but hey, at least you'll be in dreamland with a smile on your face.
Step One:
Boil a couple of Russet Potatoes. Peel and mash.
Step Two:
Dice one yellow onion.
Season about 500g minced pork with a little salt and pepper. Not too much because the Japanese Curry cubes are very salty.
Step Three:
Fry the Onions till soft and aromatic.
Add in minced pork.
Fry till cooked through.
Add two pieces of Japanese Curry and a little water, enough to make a dense curry.
Step Four:
Remove from fire and pour into mashed potatoes. Combine thoroughly.
Step Five:
Form potato mixture into patties. Dip in beaten egg, press into panko crumbs and fry till golden brown.
Step Six:
Japanese Curry Croquettes here we come!
