There are only two types of Brownie fans - The ones who like them 'Cakey' or the ones who like them fudgey. Which one are you?
Here's a recipe that I tried out and have declared a keeper. Brownie inspiration and recipe creds : handletheheat.com with Tessa Arias
5 TB (71gm) Unsalted Butter
1 ¼ Cups (249gm) Granulated Sugar (I used Caster Sugar)
2 Large Eggs + 1 Egg Yolk (COLD)
1 tsp Vanilla Extract
1/3 Cup Vegetable Oil
3/4 Cup (75gm) Unsweetened Cocoa Powder
1/2 Cup (63gm) All-Purpose Flour
1/8 tsp Baking Soda
1 TB Cornstarch
1/4 Salt
3/4 Cup (128gm) Semisweet Chocolate Chips
Preheat Oven to 325°F / 163°C
Line a 8"x8" Light Colored Metal Pan with foil or baking paper (not Glass and not Ceramic)
In a bowl, whisk together dry ingredients - Flour, Cornstarch, Baking Soda and Salt
In a separate mixing bowl, microwave Butter and Sugar for about 1 minute or till Butter is melted
Whisk in Eggs, Egg Yolk, Vanilla Essence.
Stir in Vegetable Oil and Cocoa Powder
Fold in Flour mixture till combined.
Stir in Chocolate Chips.
Pour into prepared baking tin and bake for 30 minutes till cake tester in centre comes out moist with a few crumbs on it.
When cool, store in airtight container.
Great eaten as it, or with a scoop of vanilla ice cream
