FRIED MACARONI

Fast. Tasty. Satisfying. Macaroni in this recipe can be swopped for just about any other carbo and still taste fantastic - Mee Tai Muk, Penne, Spaghetti... well, you get the picture.






Minced Pork or Chicken

Macaroni


MEAT SEASONING

  • Oyster Sauce

  • Light Soya Sauce

  • Chinese Wine

  • Salt

  • White Pepper

  • Sesame Oil

  • Sugar

  • Cornstarch



Dark Soya Sauce


Shallots

Garlic

Spring Onions






STEP ONE:

  • Season the meat with Meat Seasoning.

  • Amount depends on the weight of meat. Start off with about a TB of Oyster Sauce, Light Soya Sauce, Chinese Wine, Cornstarch, Pinch of Salt and a dash of pepper and a Tsp of Sesame Oil (A little goes a long way with Sesame Oil. The taste is overpowering. You can always add more at the end)

  • Let sit for about 15 minutes to fully flavour the meat.


STEP TWO:

  • Fry sliced Shallots in oil to brown. Take them out and cool of a Paper Towel.

  • Add Chopped Garlic and fry till golden brown.

  • Add meat and fry on high fire till brown. Add a little water and simmer till cooked.

  • Add boiled Macaroni. Stir in and taste. Add extra Oyster Sauce and Light Soya Sauce and Sesame Oil if needed.

  • Add a little Dark Soya Sauce for a richer taste and appearance.


STEP THREE:

Serve up with a garnish of the fragrant Brown Shallots and chopped Spring Onions.
