EAST MEETS WEST FRIED CHICKEN

Why East Meets West? Cos it's a East and West type marinade - Salt & Pepper and Soya Sauce & Oyster Sauce. Marinade overnight in Fridge. Cut chicken right down the middle of the breast bone. Take out of fridge about an hour before frying to bring to room temperature. Pat dry. Deep fry on really low fire till golden brown and cooked through. Why is this method of cooking so good? Cos since there is less of the chicken exposed to the browning and cooking in the oil, the chicken meat remains juicy, succulent and teeming with the flavour of the overnight marinade.
